Lucca likes milk that goes straight from the cow to the glass.
Automatic distributors of unpasteurized milk in Lucca are selling 5,000 litres per week.
The most popular distributor is Lammari, installed in February in the parking lot of an elementary school.
The milk is supplied by the Stefano Baisi farm, which sells between 500 and 550 litres of milk per day (around 600 litres on Saturday and Sunday).
Castelnuovo's milk machine in Piazzale Rossi sells anywhere from 120 to 150 litres during the week (around 200 litres during the weekend).
The milk machine in Gallicano, located in the piazza behind Centro Leclerc, sells 170 litres during the week and around 300 litres on the weekends.
Both are supplied by various farms, including Graziano Tardelli in Molazzana, Vittorio Rocchiccioli in Castelnuovo di Garfagnana and Antica fattoria del Cesaron di Ivonne Pellegrini in Camporgiano.
The farms are very satisfied' with this modern tool being applied to one of the oldest practices in the world, able to return to the value of farm produced products and its most important product'.
Another point in its favour are the savings: the price of milk from distributors has remained stable at one euro per litre, as opposed to the 1.20 euro (sometimes as high as 1.60 euro) of large scale distribution milk.
Molazzana farmer and president of Apa Provincia, Graziano Tardelli, explained: Milk distributors gave life back to unpasteurized milk, which used to be a niche product and is now widely consumed.
Parents are introducing it to their kids, and many moms prefer it to packaged milk'.
