Italian cuisine gets French compliment from Michelin

Italian cuisine stands out for its diversity and Italy for the many places one can eat well, according to Eduard Michelin, the CEO of the French group which publishes the world's most respected travel and food guide.

"It is my hope that Italian cuisine will continue in its diversity and simplicity and that its popularity around the world will grow," the Frenchman added.

Michelin made hs remarks here Monday night at the presentation of the Barilla Academy's "Manifesto of Intent", an initiative to defend and promote Italian cuisine. According to Michelin, "Italian cuisine has not expressed its full potential abroad. I believe that it should do so in the same way that French cuisine and, in a certain sense, Japanese cuisine have".

The guidebook publisher also had kind words for Italian food critics who he said "respect the opinions of others while expressing different ones themselves". This in contrast to "certain French critics who spend more time criticising other critics than expressing
differentiating points of view".

"It is my hope that these people will someday behave like adults and not spend 80% of their own time criticising our guide. This would be a much better and more constructive approach".
