whilst speaking with him and talking not only houses and such... looking out over the bay at guilianova...we got onto olive talk... and as its quite topical there is one thing that all oil producers of any good oil insist on... you pick and press in the same day...
olives...doesnt matter what the weather is overheat quickly... and if you have them stacked up its like a compost heap ...getiing to temperatures which destroy all the benefits of cold pressing...because they have already got to the stage where the oil will have a very slight sour taste from being stored too long..
