Have you ever tasted this great pasta dish from Sardinia? It originates from Ogliastra and it is like pockets of pasta filled with boiled potatoes, ground Sardinian Pecorino and spices. But you do not need to go to Sardinia to buy them. I regularly get them from the fresh pasta shelves at any Esselunga supermarket in Lucca or Pescia and even at the Conad supermarket in Bagni di Lucca. Boil them in plenty of salted water as specified in the container (don't overcook) and you serve them with tomato sauce and grated Pecorino cheese. Last time I also tried a combination of sauteed cherry tomatoes, halved, basil and Gorgonzola "dolce" and the family loved this sauce. Very easy to prepare, too. Enjoy!
