Could anyone help with one or two more things please?

We have one and a half demijohns of red stuff going gloop gloop in the lavenderia. Should the half demijohn be put into a smaller container so it comes up to the neck? And if only having a small opening to the air matters, what do you do when you start decanting and you get less each time because of the sediment left behind?

And where does oil come into play - could we just pour some of that in to keep the air at bay?
