5125 Olive Oil production

Hi all.

We have a 3.5Ha olive grove (abandoned for over 10yrs until last year) in Loreto, with nearly 450 olive trees. Well thats what the Compromesso says.

We still have not explored our land fully because of the overgrowth.

Our land falls within the DOP area.

At the moment we are in the process of restoring/building the old farm house but next year we would like to get the land sorted out.

Although the locals have been very helpful, but when it comes to olive-oil production there seems to be some hinderances in our path.

We can understand their scepticism as the region does produce the best olive oil, in our opinion. And yet, over the last two years we have come across at least 10 abandoned olive groves just in the Comune of Loreto.......it is a crying shame.

We have been wondering if anyone would be interested in giving us any advice or maybe even forming a small 'coperitivo'.

I've heard there are small farmers who will tend the land and then share the harvest with the land owner. Has anyone else come across such a farmer?
