In April we still find good artichokes, the last of the season, and fava beans start appearing in the markets, which give us a chance to combine these great ingredients together. Here is a simple recipe for “Frittata di carciofi e fave alla menta”, artichokes, fava beans and mint frittata.
Ingredients:
*4 artichokes
*200 gr fresh fava beans
*4 eggs
*1 / 2 onion
*4 tablespoons Parmesan cheese
*4 tablespoons of chopped fresh mint leaves
*salt and pepper q.b.
Clean the artichokes, cut into thin slices and place in a bowl with water and the juice of a lemon. Beat the eggs with Parmesan cheese and chopped mint leaves, add a pinch of salt and pepper and set aside. Finely chop the onion and let it sweat over a low heat in olive oil. Drain the artichokes, pat them dry with a tea towel, add them and the fava beans to the pan, cook for 10 minutes and season.
When the artichokes and the fava beans are soft and juicy, take a couple of spoons and set aside. Then turn the heat on and pour the egg mixture in, letting the frittata cook on one side first then turning it with the help of another pan or a dish to cook on the other side.
Place the remaining artichokes and fava beans on the frittata and sprinkle with fresh mint leaves before serving.
