Description

Ask any Italian which their favourite region to eat is and the answer will most likely be Emilia-Romagna! Bologna, Modena and Parma, just to mention a few cities in the food valley, are home to some of the culinary specialities that have led to Italy’s worldwide fame: Parmigiano Reggiano, Prosciutto Crudo, Traditional balsamic vinegar, Mortadella, Tagliatelle with Ragu' and Tortellini. Who hasn't heard of at least one of these? And how can we forget the vast selection of traditional wines? Sangiovese, Lambrusco, Albana and Pignoletto, to name just a few of the most well-known.

Our PPB , Parmigiano, Prosciutto and Balsamic tour, will combine a behind the scene visit and tastings of these fantastic products

We will start with an award winning dairy farm which has been selected by many famous chefs and experts such as Massimo Bottura, Stanley Tucci and Rick Stein where we will discover the secrets of the making of the king of all cheeses and end with a tastings of ricotta made on the same day, different local cheeses and different ageings of Parmigiano Reggiano, including the rare breed "white modenese cows" paired to a glass of Pignoletto.

The following gourmet stop will be an artisanal family run Prosciuttificio where we will learn the production process behind this delicacy and end with a tastings of prosciutto with a glass of local Lambrusco wine.

We will end our flavour experience discovering the secrets of the black gold of Modena, the traditional balsamic winegar which you'll taste "young" , 12 years old, and "extra old", at least 25 years old!
