Clean and shell the broad beans by snapping off the stem end of the pod. Pull down and remove the "string" that runs along the inner curve of each pod and runnin down your finger inside it remove the beans. Blanch the beans in plenty of boiling water for 3-4 minutes. Drain and allow to cool under running water. Meanwhile prepare the vinaigrette by placing in a bowl the vinegar, the e.v. olive oil, salt, pepper and chopped garlic. Prepare some cheese shavings with the help of a potato peeler. Once cooled transfer the beans in a large salad bowl, drizzle with the vinaigrette, add the cheese shavings and serve.
