If you look in any Italian kitchen, you’ll find, without a doubt, a few simple ingredients that will turn any dish into a tasty meal. Olio extra vergine di oliva (Extra virgin olive oil), aglio (garlic), limone (lemon), sale (salt) and pepe (pepper) are staple ingredients found in numerous Italian recipes, especially used with fish. It’s a light, yet flavorful way to season your food while still letting the ingredients’ flavor shine.

Ingredients
wild caught white fish
1 lb wild caught white fish (perch, bass, halibut, haddock etc), filleted and cut into 6 pieces
extra virgin olive oil
3 tablespoons
garlic cloves
1 clove, skin removed and minced
lemon zest
Zest from 1 organic lemon
salt
3 pinches
black pepper
3 pinches
paprika
3 pinches
broccoli
1 head, cut into florets
fennel
1 fennel bulb, sliced
onion
2 red onions, thinly sliced
cherry tomatoes
1 pound, cut in half
extra virgin olive oil
a good swirl
salt & pepper
a few pinches

Instructions

Preheat the oven to 400°F.

Position the fish in a shallow dish. In a small bowl add the extra virgin olive oil, minced garlic, lemon zest and juice, salt, black pepper and paprika. Stir well then pour over the fish. Let marinate while you prepare the vegetables.

In a large roasting pan, add the chopped broccoli, fennel, onions and tomatoes. Top with a good swirl of extra virgin olive oil and some salt and black pepper. Mix with your hands until all the vegetables are well coated and distribute them evenly in the pan. Slide the pan in the oven and bake for 15 minutes.

Now take the vegetables out of the oven and top with the 6 fish pieces and remaining marinade. Return the pan to the oven and continue baking for another 8-10 minutes or until the fish is opaque and easily flakes when the thickest part of the fish is pricked with a fork. (The actual baking time will depend on the thickness of your fish fillets.) When ready, serve from the pan or transfer to a serving dish. Buon appetito.
