Etroubles (Aosta Valley)

Etroubles is a town in the Aosta Valley region of northwestern Italy. Sights include a bell tower from a now disappeared 15th-century Romanesque church and a medieval watchtower (built in the 12th century on Roman foundings). A unique project in the Valle d’Aosta was carried out by the city administration in May 2005: “An open-air museum” thus uniting the picturesque mountain landscape to artistic works of great quality. Visitors will have the chance to admire 21 works of art scattered in the borgo, signed by world-renowned artists, on display 365 days a year.

This dish underscores the earthy nutty flavor of fresh fava beans, which combines wonderfully with the crunchy bread bits and creamy Fontina cheese. It’s one of the few pasta dishes from Valle d’Aosta, as that northern most Italian region specializes more in polenta and rice.
