The 'bruschetta caprese' is a typical Neapolitan starter which can be served with an aperitivo, as a hearty appetizer or even as a main vegetarian course.

Drain the buffalo mozzarella and slice it, place the tomatoes previously halved or quartered in a bowl, add some black olives, basil, oregano, extra virgin olive oil and a pinch of salt. Mix well to blend all the flavors. Cut four 2 cm slices of bread and lightly toast them until they are golden brown on both sides. When they are ready rub some garlic on the bread, top with a slice of mozzarella and cover each slice with the mixture. Sprinkle the bruschetta with a little extra virgin olive oil and serve.
